Ingredients
1 package digestive biscuits
150 gr melted butter
400 gr soft cheese (like philadelphia cheese)
1 can condensed milk (about 400gr)
1 can sour cherries in syrup
1 teaspoon cornstarch
Method
Add digestive biscuits in a mixer and mash them well.
In a bowl add the meshed biscuits, the melted butter and stir very well.
Take a plater and a large dessert form (round), add the biscuit mixture and
squeeze
to make it smooth.
In an other bowl add condensed milk and soft cheese and beat it with a mixer to make it smooth.
Add the mixture above the biscuit mixture.
Place on the surface a cooking film and place on the refrigerator.
Drain sour cherries well and pure their syrup in a small pot (keep 20ml) and let it star boil.
On the 20ml of syrup that you kept, dissolve the cornstarch, and when the syrup stars boiling pure the cornstarch mixture and stir fast.
When thickens remove from heat and let it cool (stir frequently).
When syrup is cool, remove the cheesecake from the refrigerator, add on top the sour cherries and then very gently the syrup.
Put on refrigerator for some more time to cool.
