Traditional Greek lentil soup

Ingredients

  • 1 cup lentils (washed and cleaned)
  • 1 large onion (chopped)
  • 2 bay leaves (washed)
  • 1 carrot in pieces/cubes (optional)
  • 1/3 cup olive oil
  • 2 medium tomatoes (pureed)
  • 2,5 cups water
  • salt, pepper, oregano

Method

  1. Add all the ingredients (except salt): the lentils, the onion, the bay leaves, the carrot, the tomato, the olive oil, pepper, oregano and the water in a pot.
  2. When it stars boiling, close the lid and let it boil in a medium-low heat for 20′ (depending on lentils).
  3. When the have boiled, open the lid, add some salt, stir and remove from heat.
  4. The food is ready to be served.
Tips:

In all legumes we don’t salt them when cooking because they peel.

You can use thin or thick lentils, brown or red…

In this food fits tastes good with feta cheese.
