Anchovy with oregano

Gavros riganatos

Ingredients

  • 1kgr anchovy
  • salt
  • pepper
  • oregano,
  • olive oil
  • lemon juice

Method

  1. Wash anchovy and clean by cutting off the head and viscera of the abdomen.
  2. Press with the hand inside the abdomen until to the bone comes off and open the fish in the middle into two fillets.
  3. Cut the tail and close fish again.
  4. Place one next to to another into a baking dish.
  5. Add salt, pepper, oregano, some olive oil, some water and bake at 180oC for 20′-25′.
  6. Be careful not dry the juice in the pan.
  7. Before turning off the oven, add the lemon juice.
Tips:

Serve with boiled potatoes, frying vegetables, fried potatoes or salad.
