Greek-style quail with lemon

Ingredients
8 ortikia (quails)
olive oil
1 onion (chopped)
1 glass water (approximately 200-250ml)
2 lemons (juice)
oregano
salt
pepper
Method
Heat the olive oil in a deep frying pan over medium heat and sauté the onion.
Season the ortikia with salt and pepper, and sauté them for about 3 minutes on each side.
Add the lemon juice, the water and the oregano.
Cover with the lid and let it cook for about 10 minutes until the ortikia are ready.
Remove the ortikia from the frying pan, transfer them to a plate, and keep them warm.
Let the liquids boil for 5 more minutes so you can get a sauce.
Put the ortikia back into the frying pan and mix with the sauce.
Place on a plater and serve with rice.
