Ingredients

  • 1kgr sour cherry
  • 1kgr sugar
  • 300ml water
  • lemon drops
  • 1 small cinnamon stick

Method

  1. Clean morellos from the seeds and put them in a saucepan with the sugar and cinnamon and leave overnight.
  2. The next day the sugar is almost melted, the morellos have taken out water
  3. Add the water (300ml) and boil for 1h-1.5h over low heat, stirring frequently to avoid sticking to pan.
  4. Shortly before the end of boiling add the lemon drops.
  5. Check the syrup. With a spoon take a little syrup and let a drop fall into a plate. If the drop falls and remain as a drop, then the syrup is ok. Boil again if not.
  6. Cover the saucepan in case that there are grains of sugar on the sides of the saucepan to melt and not sugarcoat.
