Koukouvagia or Koukouvayia

Ingredients

  • 6 Cretan barley rusks
  • 3 chopped tomatoes
  • 150gr-200gr feta or grated mizythra Cretan
  • 50gr olive oil
  • Oregano and thyme

Method

  1. Soak the barley rusks in water.
  2. Brush them with a little olive oil.
  3. Add the grated tomato and the grated cheese.
  4. Sprinkle with oregano and thyme.
  5. Pour some olive oil drops.
