Lentils combined with rice

If you are tired of the classic lentil soup, try the lentil combined with rice. It is much more nutritious and children love it, since it does not contain that much broth.

Ingredients

  • 1 cup lentils (washed and cleaned)
  • 1/2 cup Carolina rice (washed)
  • 1 large onion (chopped)
  • 2 bay leaves (washed)
  • 1 carrot in pieces/cubes (optional)
  • 1/3 cup olive oil
  • 2 medium tomatoes (pureed)
  • 4 cups water
  • salt, pepper, oregano
  • lemon juice for serve

Method

  1. Add all the ingredients (except salt and rice): the lentils, the onion, the bay leaves, the carrot, the tomato, the olive oil, pepper, oregano and the water in a pot.
  2. When it stars boiling, close the lid and let it boil in a medium-low heat for 20′ (depending on lentils).
  3. When the have boiled, open the lid, add some salt, the rice, stir and let it boil again for more 20 minutes.
  4. Remove from heat and leave it with open lid, so rice stops boiling and not to become sloppy.
  5. Serve in plates and add some lemon juice.
Tips:

When cooking is finished, and you remove the pot from the heat, maybe there is enough broth. Don’t worry, by the time it will get thick.
