Rice meatballs soup with avgolemono

Giouvarlakia avgolemono

Ingredients

  • 500gr minced beef
  • 100gr-150gr Carolina rice washed and soaked for 30 minutes
  • 1-2 large onions and 1 clove garlic, minced
  • 1/2 bunch dill, finely chopped
  • 1 tablespoon chopped mint
  • 1 egg
  • 2 mefium carrots chopped in cubes
  • salt, pepper, oregano

Method

  1. In a large bowl mix all the ingredients and form meatballs.
  2. In a large pot add enough water, some olive oil, salt, pepper, oregano and let it boil.
  3. When water boils, add gently one by one the meatballs.
  4. Cover the pan, lower the heat and let them boil for 40 minutes.
  5. When finished cooking prepare the avgolemono.
