Roll pies with greens

Ingredients

for homemade country style pastry sheet:

  • 1kgr flour for all purpose
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 teaspoons vinegar
  • 1 cup water (lukewarm)

for the filling:

  • 1kgr-1.5kgr greens (eg spinach, chard…)
  • 1 leek
  • 1 small zucchini grated
  • 1 bunch fresh onions
  • 1 bunch dill
  • 2-3 sprigs mint
  • 600gr feta cheese
  • 3/4 cups olive oil
  • 2 eggs
  • 1 tablespoon frumenty
  • pepper

Method

prepare the home village sheet:

  1. In a bowl add the flour and make a small hole in the middle.
  2. Put all the ingredients there except water. Add the water slowly and knead until the dough is soft and gentle.
  3. Divide the dough into 4-5 balls, the cover with a wet towel and leave for a while until you prepare the filling.

prepare the filling:

  1. Wash the greens and finely chop.
  2. Add a little salt and rub with hands to wither and track well to leave the fluids.
  3. Place the greens in a bowl and add the feta cheese, eggs (scrambled like an omelet), the frumenty and a little olive oil and mix well (you may need a bit of salt if the cheese is not salty).
  4. Add a little pepper and stir again.

begin to open the sheets:

  1. Open the sheets with the rolling pin flouring constantly to prevent sticking and to be quite thin.
  2. Cut into strips and each strip cut it in half. With a brush, spread a little oil on each strip.
  3. On one side of the strip put 2 tablespoons of the filling mixture and roll tightly by turning the side of the dough inwards, as roller shutters.
  4. Place rolls on a greased baking pan and on top spread the mixture of a beaten egg and some oil.
  5. Bake at 200oC for 1h or so, until golden brown.
