prepare the home village sheet:
- In a bowl add the flour and make a small hole in the middle.
- Put all the ingredients there except water. Add the water slowly and knead until the dough is soft and gentle.
- Divide the dough into 4-5 balls, the cover with a wet towel and leave for a while until you prepare the filling.
prepare the filling:
- Wash the greens and finely chop.
- Add a little salt and rub with hands to wither and track well to leave the fluids.
- Place the greens in a bowl and add the feta cheese, eggs (scrambled like an omelet), the frumenty and a little olive oil and mix well (you may need a bit of salt if the cheese is not salty).
- Add a little pepper and stir again.
begin to open the sheets:
- Open the sheets with the rolling pin flouring constantly to prevent sticking and to be quite thin.
- Cut into strips and each strip cut it in half. With a brush, spread a little oil on each strip.
- On one side of the strip put 2 tablespoons of the filling mixture and roll tightly by turning the side of the dough inwards, as roller shutters.
- Place rolls on a greased baking pan and on top spread the mixture of a beaten egg and some oil.
- Bake at 200oC for 1h or so, until golden brown.
