Santorini yellow split peas

Fava Santorinis

Ingredients

  • 1 cup fava (yellow split peas)
  • 2,5 cups water
  • 1 dry onion
  • 1 medium carrot
  • Salt and pepper

Method

  1. In a pressure cooker add the fava and water.
  2. When it starts boiling remove the foam, add the onion (skinned and whole), the carrot, salt, pepper, close the cooker and let it boil in medium heat for about 20 minutes.
  3. Open the pressure cooker and carefully mash the fava with puree tool or in a blender.
  4. The fava is ready to serve.
Tips:

Serve with chopped parsley, onion (dried or fresh), some olive oil and lemon.
Can be combined with fish, fried eggplant, fried zucchini, fried peppers…
