Spinach with rice

Spanakorizo

Ingredients

  • 1kgr spinach washed and cut into chunks
  • 5-6 onions chopped
  • 1 bunch dill, chopped
  • 1 tablespoon tomato pelte or 200ml tomato juice
  • 5 tablespoons olive oil
  • 300gr rice carolina
  • 1 cup hot water
  • salt, pepper

Method

  1. In a saucepan heat some oil and saute the onion.
  2. Add the rice and stir.
  3. Add the spinach amd stir.
  4. Add tomato pelte or tomato juice and stir.
  5. Cover with water, add salt and pepper and stir.
  6. Close the pot, lower the heat and let it boil for 15′-20′.
  7. Open the pot and add the dill.
  8. The spanakorizo is ready.
Tips:

Can be served with a little lemon juice.
