Stuffed tomatos and pepers with rice

Homemade Greek Gemista

Ingredients

  • 6 red ripe tomatoes
  • 4 green peppers
  • 2 medium onions chopped
  • 1-2 garlic cloves ground
  • 1 bunch parsley
  • little chopped mint
  • 1 grated zucchini in sieve
  • 100-150ml olive oil
  • 10 tablespoons rice carolina rice (calculate 1-1.5 tablespoon of rice for each stuffed tomato or papper) – soaked in water for 30 minutes
  • salt, pepper, turmeric, oregano

Method

  1. Wash the tomatoes and peppers.
  2. Cut a lid from the peppers and throw the spores.
  3. Cut a lid from tomatoes, blender the contents and pure into a bowl.
  4. Place the tomatoes and peppers in a pan.
  5. In the bowl that you have poured the tomato juice, add all the other ingredients: onions, garlic, parsley, mint, zucchini, rice, oregano, salt, pepper and half the oil and mix well.
  6. With a spoon, fill the tomatoes and peppers and close the lids.
  7. Pour over stuffed into the pan with the remaining olive oil and some water.
  8. Cover the pan with foil and bake at 200 oC for 1,5 h-2h.
Tips:

You can use any vegetable you like. Use also eggplants, onions, zucchini, potatoes….
