Summer Green Beans

Kalokairina fassolakia

Ingredients

  • 1kgr fresh green beans (trimmed and washed well)
  • 1 large dry onion (chopped)
  • 2-3 cloves garlic (chopped)
  • 2 carrots (peeled and sliced)
  • 2-3 potatoes (cleaned and cut into pieces)
  • 1 to 2 zucchini (cut into thick slices)
  • 5-6 stalks parsley
  • 3 tomatoes (minced)
  • 1/4 cup olive oil
  • 1/2 cup red wine
  • Salt and pepper

Method

  1. Place the oil in a saucepan to heat well, add the onion and garlic and stir briefly.
  2. Add potatoes, carrots and zucchini and saute them.
  3. Add the parsley and fresh green beans and saute them for a while.
  4. Add wine and let evaporate the alcohol.
  5. Add the tomatoes, salt, pepper, mix well and cook over medium heat.
Tips:

You can add some water if the broth is fewer and the vegetables haven’t boiled yet.
