Cod with greens

Ingredients

  • 4 cod fillets
  • 1-2 eggs
  • bread-crumbs
  • flour, all purpose
  • Salt and pepper
  • oil for frying

Method

  1. Add salt and pepper to the fish and leave for a while until you prepare the remaining ingredients.
  2. In a frying pan add 1cm (height) olive oil and let it warm enough.
  3. In a bowl, whisk the egg to make a light omelette.
  4. In another bowl, put the bread-crumbs on another one the flour.
  5. Pass the fish first into flour, then into the egg and finally into the flour.
  6. Fry the cod into the hot olive oil for a while until golden brown on both sides.
  7. Serve with seasonal greens or vegetables.
