4 cod fillets
1-2 eggs
bread-crumbs
flour, all purpose
Salt and pepper
oil for frying
Method
Add salt and pepper to the fish and leave for a while until you prepare the remaining ingredients.
In a frying pan add 1cm (height) olive oil and let it warm enough.
In a bowl, whisk the egg to make a light omelette.
In another bowl, put the bread-crumbs on another one the flour.
Pass the fish first into flour, then into the egg and finally into the flour.
Fry the cod into the hot olive oil for a while until golden brown on both sides.
Serve with seasonal greens or vegetables.
