Velvet vegetable soup

Veloute soupa lahanikon

Ingredients

  • 1/2 broccoli
  • 1 medium zucchini
  • 1 medium carrot
  • 1-1.5 medium potatoes
  • olive oil
  • 100gr sour cream
  • salt and pepper

Method

  1. In a saucepan, boil the vegetables (zucchini, carrot, potato) and in the last minutes of cooking, add a little salt (approximately 17 minutes).
  2. Add broccoli for 3 minutes.
  3. Remove vegetables from the sausepan and add them on a blender and grind.
  4. Add some broth from the saucepan in the blender, so it is not having so thick texture, and continue beating.
  5. Add pepper, salt if needed, and beat again.
  6. Finally add the sour cream and beat again in the blender.
  7. The soup is ready to serve.
Tips:

You can also serve it cold as a dip.
